Ideal for breakfast!
Dice the ham and separate egg yolks and whites.
Finely dice the onion and cook in the butter until transparent. Add the flour and continue cooking for 1 minute while stirring continuously.
Remove from heat and allow to cool slightly before adding the milk, and salt and black pepper to taste. Cook for another 5 minutes, stirring frequently.
Remove from the heat, add egg yolks and mix thoroughly. Let the mixture cool down before adding the grated cheese and ham.
Beat the egg whites with a pinch of salt until soft peaks form. Add half of the egg whites to the cheese and ham mix and stir before folding the rest in.
Cut a sheet of SAGA Cooking Paper into strips roughly 2.5 cm higher than the sides of the molds. Line the insides of the molds with the paper strips to form a ‘tube’ which secures the soufflé’s rise.
Put the mixture in the molds and bake in a pre-heated oven at 190ºС for 25-30 min.
Do not open the oven while baking.
